This entremet is a fragrant cake composed of multiple refreshing components, perfect for celebrating mum with an afternoon tea. Enjoy a pop of flavours with the soft orange butter cake with an almond streusel base, wrapped with elderflower mousse, combined with the refreshing flavours from the apricot jam, pear compote and finally topped with a beautiful pink glaze and decorated with earl grey whipped ganache.
